What a Wonderful Year!!

We have had a wonderful 2009 year. Charlie and I have been very blessed. We have had several things occur this year. A few key highlights of the year have been when:
* We moved to Munford
* We bought and remodeled our new house
* We started our Masters (will graduate in Dec.)
* Hosted parties at our house
* Hosted our 1st Thanksgiving at our house
* Many more that I can't think of right now.
During 2009, we are very thankful for our families, friends, health, and our jobs. We are looking forward to a great 2010 year!!

Ready For Christmas!!!

We started off our Christmas Break last Friday. Friday night we went to Julia's Tacky Christmas Party and had a great time. We had fun getting our outfits together. I will post a picture on here if I can figure out how to. If not, check them out on facebook.
Charlie and I bought our last three gifts for people yesterday. Everything is wrapped and ready to go for Christmas!!! We are enjoying our Christmas break with the exception of me being on 5 mediciations. It is a blessing to enjoy the Christmas break with Charlie. We have enjoyed sleeping in, cleaning, staying in PJ's for however long, and doing whatever we want to do.
Charlie has started playing ball again but this time it's basketball. Charlie plays on our church basketball and has gotten some of our friends to join him this year. Da, Johnny, Matt and Charlie will all be playing this year along with some other guys from our school. The season begins in January. We are praying that Charlie doesnt blow out both ankles again this year like last year. Ill keep you filled in.
We hope everyone has a Merry Christmas and a Happy New Year. Enjoy being with your family and friends. Most of all do not forget the reason for the season.

4 1/2 Days and Counting...

We have 4 1/2 days of school left before Christmas Break! Believe me we are counting down the days until our break. We have been very busy since Thanksgiving. We were busy with family here, decorating the house, shopping, and finishing our 2 semester classes. We have completed everything and are enjoying being done with night class for the semester. Last week, Charlie's roommate from college stayed with us for the week and we enjoyed catching up with him. We visited Christmas city and loved all the lights and the scenes from the Bible. Last Friday night we all enjoyed dinner at the Rendevous and hanging out with Jimmy, Daniel and his girlfriend. Saturday we spent the day and night in Jackson for Emma's 3rd birthday. The birthday party was fun and we met the addition to the Smith family, Jingle. That's right my mom and dad now have another puppy. What a great weekend we had!!
This weekend Charlie and I are busy gathering items for our child we adopted this Christmas. We are very thankful that the Lord has blessed us to be able to help a child in need this Christmas from my school. Charlie and I have had fun gathering little girl toys and clothes.

Turkey Day Tradition

We had a great time having the Smith Thanksgiving at our house this year.Charlie and I talked about what all we are thankful for. We are very blessed to have wonderful families, friends, great jobs, and our relationships with the Lord. On Thursday, we had fun visiting with our family and eating some good food. After eating Mom and I decorated the house for Christmas. We did our annual trip to the movies on Thanksgiving night. We all went to see The Blind Side. If you haven't seen it, go see it. It is an awesome movie. Mom, Dad and Andy spent the night with us on Thanksgiving. We had been discussing it all week and we had our alarms set for Black Friday. Mom, Charlie and I ventured out at 4:00 am to Wal-Mart. Andy and Dad sold out on us. We made it to W-Mart and got some great bargains. Mom was lucky enough to get the last flat screen TV. We spent the morning at 2 Wal-Marts, Home Depot and Lowe's. Black Friday was a success for us.
This week we have gotten a lot accomplished. Our Christmas decorations are up, Christmas cards will be mailed this week, and we have 2 people left to buy on our Christmas list. We have enjoyed our Thanksgiving break but it's back to reality on Monday. We have 3 weeks until Christmas Break. We will be counting down the days!!

We Are Ready for a Break

Finally, we are getting closer to Thanksgiving Break. We have been busy at school and had some long weeks. We have one more week of work then we are off work a week. We've had a busy past two weeks.
I had my tee-shirt party and there was a great turnout. We had company from Jackson, Medina, Brownsville, Memphis, and of course Munford. There were between 45-50 people that came! Needless to say, we had a full house! It was great to see everyone and for everyone to finally get to see our house.
This past week we also got to see two of my aunts and uncle from Knoxville. They drove down last Tuesday night for dinner with mom and to see our house. We enjoyed spending time with them, its been way to long. The other nights last week we spent at the ball park cheering on Charlie's ball team. He's doing pretty good if I say so myself. He is averaging 2 homeruns per game.
On Friday we will be packing up and heading to Knoxville to cheer on the Vols!! I can't wait to sing some Rocky Top. Charlie has never been to a UT game at Neyland so I'm pretty excited to take him. We are going with my mom, dad, and Andy. We will spend the weekend in Knoxville and on Sunday we will be making a stop at Opryland Hotel to see the Christmas lights. This is my favorite time of the year. I know some of you are wondering is the tree up? Yes we do have one tree up but the rest of the decorations and our main tree will be up on Thanksgiving night. We have several plans during our Thanksgiving break to visit family, Christmas shopping and enjoying the week off. Pictures and updates to come.

RECIPE

Smothered Chicken

Orginal Recipe:
2-3 boneless, skinless chicken breasts
2 cans of cream of chicken
1 8 oz. sour cream
refried onions
garlic salt
stick of butter
For my recipe I added a few things:
1 can of mushrooms
1 cup of bacon bits (real bacon)


Preheat the oven to 375
Layer pyrex dish with chicken breasts
Mix soups, sour cream, mushrooms, bacon and garlic salt - Pour on top of chicken
Layer with refried onions
Put butter slices on top of onions

Bake for 45 min - 1 hr.

Next time I am going to add shredded cheese to the recipe as well.

Busy, Busy, Busy

Charlie & I have been very busy with work, masters work, and Charlie playing ball. We spend at least 2-3 nights a week at the ball park which is fun and gives us something to do. We have been busy visiting our friends and family in Jackson. For school today I dressed up as Tweedle Dee and my neighbor was Tweedle Dum. (pictures to come) Tonight we spent the evening working at Charlie's school carnival. We were in charge of the bouncy obstacle course. The kids loved it. Hoping to make a trip to Jackson tomorrow for the day to see Emma & Will Allen in their costumes. Charlie and I will stay at home tomorrow night dressed as Tweedle Dee and Tweedle Dum (Charlie doesn't know this yet) to give out candy. Rumor is our neighborhood always has tons of little trick or treaters!! We are excited. It's our 1st Halloween in our new house. We have a busy week ahead including my tshirt party on Thursday night. We love Fall Break!

We've had a great week off for Fall Break. We spent the first weekend in Jackson visiting the Sammons and Smith families. We went to dinner for my dad's birthday and spent the night with the fam. On Monday, Charlie and I went to have lunch @ TCA with Will Allen. He loved it. We had a great time. He was so excited to show us around TCA. This week we have been busy with masters work and relaxing.
This weekend Charlie is staying in Munford to help his brother move while I'm headed to Oxford to see all my Ole Miss friends at the Ole Miss v. Alabama game. I can't wait to get to the grove. It's been way to long!! Saturday night we will be staying at Erica & Zach's house, soon to be Wyatt. Sunday afternoon I will stop in Memphis for Erica's baby shower for Baby Wyatt. It's going to be a great weekend catching up with friends.
Fall Break has been a great one!! It's going to be hard to get up Monday morning and head back to the real world of work.

We LOVE Fall!!!

We spent the weekend enjoying the gorgeous weather outside!!! I had a great time in Jackson on Friday visiting old friends and shopping for fall decorations with my mom!! I had the joy of having Wuz and Emma spend the night with me at Honey and Buddy's house. Wow they are growing up.
When I got home on Saturday we began to decorate. Our house in now decorated inside and out for fall. We have mums, pumpkins, scarecrows & hay outside. And of course, I have my fall wreath on the door. (As I do for every season & holiday) I love decorating for the holidays. I can't wait until Christmas!!
We are excited because we have this next week of school and we are off work for a whole week for Fall Break!! Can't wait to have sometime off and simply relax.

More Easy & Good Recipes - Two Great Casseroles

Tortilla Chip Meat Casserole

tortilla chips
1 lb. ground beef (browned)
onions
1 can rotel
1 can cream of chicken
shredded cheese

Layer dish with tortilla chips - Crush pieces to your personal pick.
Brown meat & onions. Pour meat & onions over chips
Mix rotel & cream of chicken and pour over meat and onions layer.
Next layer is shredded cheese
Last layer is more tortilla chips

Bake on 350 until bubbly


Corn Flake Chicken Casserole

I box of corn flakes
1 stick butter
1 can cream of chicken
1 can cream of mushroom
8 oz. sour cream
2-3 chicken breasts (boiled and cut into pieces)

Boil chicken & cut into pieces
Crumble corn flakes on bottom of dish
Melt 1/2 stick of butter and pour over corn flakes
Mix soups, sour cream, & chicken together and pour on top of corn flakes
Crumble more flakes to top mixture
Melt other 1/2 stick of butter and pour over flakes

Bake 350 until bubbly (usually 30 min)

RECIPES

Choc. Chip Pie

1 stick butter
1 cup sugar
1 cup of choc. chips
2 eggs
1 tsp. vanilla
1 cup pecans
9 in. shell (graham cracker or choc.)

Melt butter - mix all ingredients - pour in shell
Bake 350 for 35 - 40 minutes

Enjoy!!


Easy & Good Chicken Pot Pie

1 can water chesnuts (if you like)
2 cans Veg-all drained or bag of fresh veggies
1 can cream of celery
1 can cream of mushroom
1 can of chicken broth
2-3 boneless chicken breats (cooked & cut up)
1 box pie crust (deep dish works best)

Mix all the ingredients together. Put one shell on the bottom. Pour ingredients on top. Put 2nd crust on top.
Bake 375 for 1 hour
Enjoy!!

Rain, Rain Go Away!!

Finally the weekend is here!! Last weekend we spent the weekend in Jackson for Will Allen's soccer game and 6th birthday party UT Style. We had a fun filled weekend planned for this weekend then the rain had to change everything. This weekend was suppose to be Munford Celebrate. This is like Double Decker weekend in Oxford. Due to the rain it has been rescheduled! Charlie and I will spend the weekend celebrating my birthday on Monday!! :) Other than that, we've been busy at work and enjoying life. Saturday we will spend the day watching college football our favorite Saturday activity. Sunday we are going to meet all of my family in Memphis for dinner & shopping!!! Have a great weekend!!

Football Time in TN and MS!!!

It's football time in TN finally!!! We are excited to follow our 2 teams this year. We are excited about the VOLS & the Rebels!! We will be attending at UT game this November in Knoxville and are hoping to make an Ole Miss game this year too!
We have a funfilled, LONG weekend planned with Charlie's Peepaw turning 80 and his big birthday bash, college football games, and of course a roadtrip to Jackson to see the Smith Clan. No weekend is complete without seeing the fam!!

First Time for Everything

Well Erica has got me into blogging! Thanks to her the Ligon's have a cute blog page. I am hoping to keep up with this when exciting things happen in our lives. Right now we are busy with work and getting back into the routine of things. Charlie and I will both be completing our Masters in Adminstration this summer. Other than that we have nothing new or exciting to share!!
